BeefDodo for the Win!

Summer time is officially here. I don’t know about you all but I am getting excited at the opportunity of coming out of hibernation. There is just something special about the summer months and the sunny days especially when it comes to FOOD!

I finally got some inspiration recently to make a variation of ‘gizdodo’ with beef which I have named ‘beefdodo’. Now if you’ve been following this blog for a while you know I don’t always like to follow the norm and love remixing dishes. Well, in this case the store just didn’t have gizzard so I had to make use of beef stew pieces instead and it turned out quite alright.

  1. Boil your meat of choice and grill it in the oven for a few until browned or crispy depending on your preference. I added some suya spice on top of my beef.

In the past I had also attempted to make this using shrimp (read to the end for the finished product)

2. Fry plaintain. It’s always best to get slightly ripe plaintain. The key I found was making sure the plaintain was still slightly firm, not yet too soft (too ripe) and not too hard (that would be unripe).

Allow plaintain to drain so that oil isn’t held in the plaintain

3. Boil blended pepper (in this mixture I used about 5 fresh plum roma tomatoes, 2 red peppers, 1 red onion and 1 clove of garlic) until it is boiled down such that the water in the mixture is reduced.

After adding seasoning to the frying pepper, add chopped green, orange and red peppers to get a beautiful medley of peppers!

4. Add beef and plaintain to the mixture

5. Voila! Food is ready

Unfortunately I forgot to take a picture before devouring my meal (beefdodo with white rice), I found a picture of an earlier attempt I made earlier with shrimp and with mushrooms with jollof rice.
