Gingerbread men cookies

I have three kids aged 4, 5 and 6, and so I’m always on the lookout for healthy, nourishing snacks for them. One kind of cookie my kids can’t get enough of is Gingerbread men. I don’t know if it’s the shape of the cookie or the taste or a combination of both that gets them all excited. I know Gingerbread men are often made closer to the end of the year, around Christmas but in our household, it is a regular treat.

For years, I would use a recipe by Annabel Karmel: https://www.annabelkarmel.com/recipes/gingerbread-men/. It’s a simple recipe and uses common ingredients that you can easily find in your kitchen. Sometimes when it’s the end of the week, and I’m all out of snacks for the kids, I rummage around the kitchen to find the ingredients for this recipe. I reduce the sugar by half… yes half (!) and they still taste sweet and yummy.

But I recently found a low-carb, low-sugar recipe by Carolyn Ketchum from All Day I Dream About Food. Here is the recipe: https://alldayidreamaboutfood.com/classic-gingerbread-men-low-carb-and-gluten-free/.

They were a hit with my kids, and my husband and I loved them too. I also love the fact that the recipe makes a tonne of cookies and they are not laden with sugar!

I don’t usually put icing on them because:
a) it’s added sugar.
b) my kids are happy to eat them without the icing.
