Day to day the table gets set. With it come new flavors and new recipes but the ones that feel familiar and remind us of sweet memories are soul nourishing too. This is how this recipe came to be a fan favorite. I have made it to share because it makes enough for a family of six plus leftovers!

You know I will always encourage you to gather around your table with the people in your life to create lasting connections. This year I am encouraging myself to be intentional in inviting my neighbors to our table. Maybe you and your neighbors have a rotation for who comes to dinner and I am so glad you do! But for the procrastinators in the audience (ahem, Daisy) I encourage you to be the first one to set the table and reach out. Neighbors who are also friends are a gift for sure, this year will be our year and I can’t wait!

In the fall I read the book Surprised by Oxford with a friend and we made time to watch the movie on the one day it was in the cinema. We so enjoyed watching a story come to life on the big screen but I mostly enjoyed the way connecting and trust were strengthened by time at the table. The author wrote, “Aww nothing like a good meal with a friend to set the heart to what matters.” I one hundred percent agree! So, let’s set the table and invite others in allowing a good meal to set our hearts on what truly matters. Buen provecho!

Healthy Vegetable Tortellini Soup

Ingredients
  • 4 slices of bacon*
  • 1 onion diced
  • 4 carrots chopped
  • 2 celery stalks chopped
  • 4 garlic cloves minced
  • 1  tablespoon of Italian seasoning
  • 1 tablespoon of Mustard Seed Seasoning-Herban Legend*
  • 3 cups of fresh green beans whole or cut in half
  • 2 ½ cups of Zucchini Chopped
  • 1 can (28 OZ) of Fire roasted tomatoes 
  • 1 packet of Buitoni three cheese tortellini (20 Oz)
  • 6 cups of chicken or vegetable broth
  • Salt and pepper to taste
  • 4 cups of kale
  • 1 can of coconut milk
  • A parmesan rind*
Toppings for Serving

Crispy bacon*
Parmesan cheese*
Of course crusty bread*

Instructions 
  1. Gather all the ingredients to your cooking area prep the vegetables
  2. Cook the four pieces of bacon until they are crispy, take them out and set it aside
  3. Turn the stove to a medium heat
  4. To the same pot add the diced onion, carrots, and celery cook for about 5 min until onions are soft. Make sure to stir so not to burn them and also to help get up the frond off the bottom
  5. Lower the heat a little to add the garlic and seasonings, sauté for 1-2 min
  6. Then add the can of roasted tomatoes and the fresh green beans
  7. Add the 6 cups of chicken broth
  8. Bring to a boil and add the parmesan cheese rind if you are going to use it
  9. After about 7 minutes of boiling add the zucchini and tortellini
  10. Let it simmer for 10-15 minutes until the veggies are tender
  11. Taste and add salt and pepper to taste if needed
  12. Turn the heat to low and add the kale and the can of coconut milk
  13. let it cook together on low for 5 min at most and then serve immediately with any of the toppings and bread

Notas: *optional
if you choose not use bacon you can use a tablespoon of olive oil
